The best place that I visited in a village has been The White Majal, situated in Sangonera la Verde, Murcia Region.

Moreover, The white Majal is used by sightseers who are keen photographer as there are unspoilt parts with a lot open spaces and trees where everything is wonderful. It is perfect for people who like walking or riding a bike.
Around it, we can find an urbanization with luxury houses and private pools. So it is carefully controlled although people do not usually damp rubbish. The weather is warm enough for you to spend a good trekking holiday.
